How far do your leftovers go? One of my goals this month has been to use leftovers in a better way. I am notorious for making too much food, so that we will extra for quick dinners and lunches. Then the next day, and typically the night after that, we decide to eat something else. What I am left with is many containers in the refrigerator that after a couple of weeks we don’t even recognize what it once was before it turned a nasty, moldy green.
These have been my leftover revamps this month:
- Leftover rice, mixed with a tablespoon of rice vinegar, onions, carrots, and a flat egg rolled up and sliced= Perfect Fried Rice!
- Leftover steak became steak nachos
- Leftover chili became a stuffed baked potato
