Salsa and Egg Bake Recipe Weight Watcher Style

Our friend, Angie, at SuccessfulTogether, has fantastic recipes for those counting points with Weight Watchers. In this recipe, she brings us a delicious Salsa Egg Bake to make a quick, easy, and filling breakfast to get your day off to a great start!

Ingredients:
6 large eggs *You could use Egg beaters to bring down points
2.2 oz (63 g) Oscar Mayer Smoked Ham Lunch Meat
4 tbs hot salsa
1/4 cup flour
1/4 cup (28g) Colby Jack Shredded Cheese *Could use fat free cheese to bring down points
1 tbs water

Looks like the salsa coupons are gone but keep your eyes out!! They come back often same with cheese coupons!

  • Preheat oven to 375
  • Spray 8×8 glass pan with pan spray
  • Beat eggs in a medium sized mixing bowl
  • Add water and salsa. Beat until well combined
  • Slowly mix in the flour until most lumps are gone
  • Pour egg mixture in to glass dish. sprinkle with ham, top with cheese.

Bake for 30-35 minutes or until golden brown and inserted knife comes out clean.

Here are three break downs of the serving sizes with points plus for Weight Watchers.  Remember to be sure to double check points in case your ingredients have different nutriental infomration

4 servings is 5 PPV
6 servings is 3 PPV

Okay, admit it.  Every so often, on that rare morning, you crave a McDonald’s Egg McMuffin.  Okay, you caught me.  I’m totally guilty of this.  BUT, I never really thought about doing it myself the way they do it.  Making it look like theirs.  Sure I make an egg sandwich in the mornings, but this is brillant!  Who would have thought to use the muffin pan to make the eggs perfect and then bake them!!  Genius!!  For the complete recipe and how-to, check Macheesmo for tons of pictures!!

Easy Rum-Raisin Cinnamon Rolls, plus printable coupon!

Robert is not too happy that I found this recipe this morning because he is now printing this .40 off coupon on his computer and I am sending him straight to the store for the ingredients!!

INGREDIENTS:
2 tablespoons rum or 1/4 teaspoon rum extract
1/2 cup raisins
1 1/2 tablespoons butter, softened
3 tablespoons packed brown sugar
1 can (17.5 oz) Pillsbury® Grands!® Flaky Supreme refrigerated cinnamon rolls with icing *Coupon for .40 off HERE
1 teaspoon rum or 1/4 teaspoon rum extract
 Dash cinnamon
DIRECTIONS:
  • Heat oven to 350°F. Line cookie sheet with foil; spray with cooking spray. In small bowl, pour 2 tablespoons rum over the raisins. Let stand 15 minutes. (If using rum extract, omit this step and add extract to brown sugar mixture in step 2.) Drain raisins.
  • In small bowl, mix butter and brown sugar. Unroll cinnamon roll dough on waxed paper. Set icing aside. Spread brown sugar mixture evenly over cinnamon rolls. Sprinkle with raisins.
  • Carefully reroll dough into pinwheel shape, replacing any cinnamon mixture left on waxed paper. Cut into 5 rolls. Place 2 inches apart on cookie sheet.
  • Bake 20 to 25 minutes or until golden brown.
  • In small bowl, mix icing, 1 teaspoon rum and the cinnamon. Spread on warm rolls. Serve warm.
