A neutral oil is one that is light/flavorless that will just act as an emulsifier basically. Canola/vegetable oil would be best. Evoo would be too heavy.

I would love, love, LOVE to try this Homemade mayo without the additives and preservatives. Problem is, I am terrified of using the yolk uncooked. Seems like our food supply is becoming increasingly unsafe and the thought of using raw eggs scares me.

Me too - BUT - I recently overcame that fear when I made home made liquid gold, ummm I mean, Hollaindaise Sauce! The Lemon kinda 'process cooks' the egg and it is totally A-Ok!

I need to go buy a lemon today to try this. Growing up my mom used Miracle Whip and I hated it. So all these years I thought I hated mayo until I tried Hellmans that I got dirt cheap at Wags. I fell in love. I know this is going to be yummy.

My husband has made mayo also. Very good. A lady here at work (we call her Martha Stewart) that caters sometimes will only use home made mayo. She uses herbs also to flavor it.

The hand blends are very cheap. I got mine for $15 and we've had it for years. They are so fun. We call it the boat motor! hehe

Spacegirl just wanting to save as much money as I can.
