Without a doubt, hands down: The Mississippi Pot Roast. I will never EVER cook a pot roast any other way. It's THAT good.

1 pot roast, about 3 - 4 lbs.
1 envelope Hidden Valley Ranch powder mix
1 envelope McCormick's brown gravy
1 stick of butter
5 or 6 pepperoncini peppers.

Put the pot roast in the crock pot. Pour the dry ranch mix and the dry gravy mix over the roast. Put the stick of butter on the roast. Put the peppers on the roast.
DO NOT ADD WATER

Cook 8-10 hours. remove the meat from the crockpot and shred with 2 forks. Remove the peppers and either eat separately or discard.

Heat the liquid at the bottom of the crock pot in a pan on the stove until it begins to boil. Add a slurry of corn starch and cold water until the gravy tightens up to the consistency you want.

Serve the beef and gravy over egg noodles or mashed potatoes.

You can thank me later.

Believe it or not, no. I am very sensitive to spicy foods and I love this. But you could very easily use less peppers to get a more toned down flavor.

We like this one...

Slow Cooker Chicken Enchilada Soup

It does call for you to sauté the onion, pepper and garlic, but I never have and it comes out great. Incredibly rich and filling. It is a favorite at my house, and when taken to a potluck, is one of the first things to go...

Boneless pork country style ribs go on sale BOGO quite often in my area, so when I get a good deal, I layer the boneless ribs with layers in the crock pot, salt, pepper and garlic powder, then pour a full can of cola over it all (Pepsi/Coke/generic, doesn't really matter), throw the lid on and cook on low for 8 hours. When ready to serve, pull the meat out and shred it, mix with your favorite BBQ sauce (or make your own) and serve on rolls for pulled pork sandwiches. Serve with cole slaw and pickles... yummy!

Super easy and super delicious!
