I do not have a "recipe" for the eggs, but I can tell you what we have done with our eggs over the past few days. My mom was visiting from out of state so everytime I went to get eggs, she got some too! So, needless to say, we have LOT'S! My mom made deviled eggs with them and some fried egg sandwiches for lunch one day. We also boiled some and sent them with my hubby to work. We made egg salad and potato salad. Today I am going to make some tunafish for my DH and add boiled eggs to it. Sometime this week we will have breakfast for dinner with the eggs and the bacon I bought with the bacon Flip few weeks ago!
Oh, and with the peanut butter, I am going to make peanut butter fudge this Christmas using the marshmallow cream recipe on the jar. I will give this to teachers in a little gift basket along with a candle and some other things. |

Do you have a jar of the marshmallow cream? I would love for you to post that recipe in it's own thread!

No, I do not have a jar at this time, but, let me look to see if I may have written it down somewhere!

Well I am thinking of doing some egg biscuits with some of the free eggs and now biscuits I am getting. A friend told me to use a muffin tin and bake them in the oven to make the eggs. Then the come out in the right shape.
I would just say scramble them up with a little milk and pepper to taste (add cheese if you want) and pour into prepared muffin tins. I don't know how long or what temp, but I would probably just bake them at 350 and watch to see when they are done. Do you put the biscuit in the muffin tin first and then pour the egg on top of it?

Oh, sorry that was confusing. No you bake the biscuits according to the package and then open them and put the egg inside. The muffin tin was just to make the eggs pefectly round to fit right on the biscuit. Sorry about that.
