Sorry I am so late responding to this! I just want everyone to be aware that the policy states:

"No “cash back” will be given for coupons of any kind."

For the most part, WUC feels that a statement like that only means actual cash back (you can't buy a $2.50 item, pay with a $3 coupon and get $.50 handed to you). This is not referring to overage applied to another item. With that being said, if the manager may feel differently. So this is always a YMMV situation. I look at overage as a gift and I never expect it.
