If I remember correctly, the green tomatoes that were beggining to turn or ready to start turning, I wrapped in squares of newspaper and placed in a box about 2 layers deep and kept in a cool, dark cabinet. They ripened slowly and we had garden tomatoes at Thanksgiving.

Thanks. We have been ripening the tomatoes that have started to turn by putting them in brown paper bags and closing them tight. I think the gases that they omit help rippen them, which is why you should keep the bag closed tight (although, I am not sure if I remember that right).

I think we will also try some fried green tomatoes and make some green salsa with the rest. I am sad my garden is done. Since we live on a mountain though, our temperatures have already dropped into the 30s. Boo Hoo.
