Carrots will dry out if you just leave them in a bag without blanching them/flash freezing. Buy doing it in water they keep much better and are crisp when you thaw them out.

You can also make twice baked potatoes or potato skins. I cook them, then freeze them so when they are thawed out, you can nuke and go.

That reminds me, if you ever want to do your chopping/dicing a day in advance, carrots, potatoes and celery all keep well in water in the fridge (I recommend an airtight container).

Phurst - I just cut up my potatoes, spices and onions and have them soakng in my crockpot for the hubs to start tomorrow afternoon when he gets home! Yummm....

I used Smart Balance Milk (lactose free) again and once again taste absolutely no difference. Love using $0.50/gallon milk! This was also the same gallon that was in the freezer for 2 weeks - no separation or anything.
