Carrots will dry out if you just leave them in a bag without blanching them/flash freezing. Buy doing it in water they keep much better and are crisp when you thaw them out.

You can also make twice baked potatoes or potato skins. I cook them, then freeze them so when they are thawed out, you can nuke and go.

That reminds me, if you ever want to do your chopping/dicing a day in advance, carrots, potatoes and celery all keep well in water in the fridge (I recommend an airtight container).

Phurst - I just cut up my potatoes, spices and onions and have them soakng in my crockpot for the hubs to start tomorrow afternoon when he gets home! Yummm....

Awesome, let me know how it turns out! I just finished my first ever meatloaf and diced up more potatoes and onions for a second round of breakfast burritos to freeze.

Speaking of potatoes, I just made some homemade mashed potatoes (but I left enough potatoes for soup later this week!). I used Smart Balance Milk (lactose free) again and once again taste absolutely no difference. Love using $0.50/gallon milk! This was also the same gallon that was in the freezer for 2 weeks - no separation or anything. I'll definately be keeping my eye out for future deals!

ps - I should note that it was my New Year's Resolution to learn how to cook this year, so don't mind me getting excited over simple things like making meatloaf, lol
