I haven't seen this thread posted yet for the month, so I thought I'd start it, since I love seeing everything everyone is doing.....





So far I've made:
Sweedish Meatballs
2 quarts chicken stock
2 quarts of chicken noodle soup

Thank you for starting this post this month, this is one of my favorite sites. Anyway, today I made DH's pound cake, DS's chocolate cake and muffin mix (from the book Make a Mix-love that book) so tomorrow I can bake up some blueberry and some peach muffins all to be put in the freezer for lunches for the next couple of weeks. Except for the muffins they are for breakfast. Now I have homemade Spg sauce cooking away to put in the freezer. Tomorrow is clean out the freezer day!!! I should say all 3 freezers! I need to see what all I have and organize everything. I haven't really been grocery shopping in weeks just using what I have on hand. I was working and putting in really long days so having cooked meals and grab and go soups came in handy.

Now tomorrow besides baking up muffins I found a new soup recipe to try. It is in the latest Penzsey's spice catalog. It is for 15 bean soup and I have the beans and I know the ham hocks in the freezer. It's a crock pot recipe and I love those & I love having individual frozen containers of soup on hand. I'll let you all know how it turns out.

I just saw a thread on Bulk Spice recipes.....Foggy has some great ones listed, so I'm planning on can/jarring up some of those this week so I can cut down on buying store spice mixes. The ones I'm working on this week: Seasoned Salt (so I don't have buy Lawry's) and Taco Seasoning (for summer camp).

I love this thread too! Thanks for starting it.

I put a breakfast casserole in the crockpot this morning. I am going to freeze it in individual portions. DH swears he is starving in the mornings since he quit smoking (YAY!!). So I will gladly put some breakfast in his lunch box. He has been eating those Jimmy Dean breakfast bowls free from walmart but we ran out. Those are not that healthy even if they were the light ones. I think they had 720 mg of sodium.

Also going in the freezer this week is Mexican rice casserole and some taco meat and hamburger patties. I found out yesterday when the meat guy leaves for the weekend at a local grocery store, he marks everything down that is one day and older. Umm score for me!!! I got 15lbs of ground beef, boneless chicken breasts, and pork loin chops yesterday. Next Saturday I am getting roasts! They lady that works in the deli beat me too them yesterday lol.

I made beef barley soup yesterday. It called for a packet of onion soup mix. I googled it and found this:

I won't be buying any more packets of onion soup mix. It was tooooooo easy to make and I had the ingredients. I also make my own evaporated milk. Next time you need an ingredient...why not Google it? Save gas and money!

Received some more stale bread from the "bread bank" at our church. One member of our church delivers the day old bread from the local Publix bakery and we put it out for everyone to take. Well, I usually get the left overs that no one wants and is going to go bad. What do I do with it? Make bread crumbs of course. I now have 2 gallon size ziploc bags of home made fresh bread crumbs. Will not have to buy any again, now that I know how easy it is to make my own seasoned bread crumbs.

I am new to freezer cooking and couponing so this has been a busy week (last sat was my first couponing trip and I spent yesterday and today putting together meals when I got the chance). So far I:

roasted a whole chicken that I got on sale
cut off chunks and used some of my couponed veggies to put together 2 chicken stir fry batches with homemade teriyaki sauce
shredded what I didn't use in those for later meals
boiled the carcass twice for 2 batches of chicken stock that I froze
put together some chicken and broccoli alfredo using boneless/skinnless/thin cut chicken breasts, broccoli, bacon bits, and alfredo sauce.


Not sure how any of it will taste come cookin time. I have never made any of those meals, much less froze them to cook later, and I've never made chicken stock or teriyaki sauce.
