I don't keep a big freezer stockpile... I have some, pork, beef and chicken about 6 frozen pizzas and 1 gallon of milk and 4 bottles of baileys coffee creamers...I don't do batch cooking but I'm interested in seeing what I can make and freeze for later.

This is a great month for spring cleaning those freezers. Since it is the off season for most of the veggies we like I have been working on stocking up on meats with sales and have had whole sirloin beef cut and ground (portioning those out). I can't make enough chicken stock, we go through it so fast with cold weather soups, stews, chili. Going to try vegetable stock tomorrow. Purchased 20lbs of boneless skinless chicken breasts from Aldi's for $1.69lb, cut and divided it out Wed.

I want to start doing more batch cooking but right now I am working on cleaning out the freezers which means I want to eat what we have and start fresh.

My pancake stock is dwindling so I will have to do another batch of those. I have 2 roasts in my freezer so those are going to be cooked. I think I will do 1 small batch of shredded seasoned beef for nachos, 1 small batch of bbq beef, 1 small batch of jerk pork and 1 small batch of bbq pork. And If I can ever get to Target to get my .25 spaghetti sauce I will doctor those up with some fresh veggies and turkey burger and freeze. And I need to get a couple batches of sloppy joes cooked and thrown in the freezer. Oh and I am doing a super big batch of breakfast burritos and meatloaf muffins. The meatloaf muffin will probably be a 3 batch. Those seem to go quickly around here. And I am going to attempt to try to freeze a couple batches of cookie dough and some blueberry muffins but those seem to go quickly too!

I haven't done much batch cooking or freezing lately as my freezer is full of Jimmy Dean (hubby loves them on weekend mornings) AND lunch meat. Winn Dixie had a BOGO sale on 1 lb deli meat and I had $1/2 coupons.....so stocked up the family for 6 months of lunch meat for less than $20. Ended up being $1.99/lb which is an absolute STOCK UP price for me in S. Florida.
That said, this week I hope to make a large pot of marinara sauce that I can divide up between sloppy joes, chili and spaghetti sauce. Digging out of debt, 1 coupon at a time.....
