Default Stressed to the max and sick of the same ol' same ol'

I am in need of new ideas for dinners. Fast stuff I can prepare a head of time or precook and freeze. Between working full time, having 3 kids at home, 11 horses elsewhere and a mother with dymensia, I am at a breaking point! I would like to get back to having meals in the freezer, I am sick of the same ol', same ol'.

How about we post or link a great recipe we have that can be made ahead of time or frozen to make some of our lives a bit simpler.

Crockpot would be great. It is so much easier and the clean up is great. I am sure everyone would appreciate it!

Here is our favorite crockpot meal:
4-5 boneless/skinless chicken breasts
1 jar salsa
1 can black beans (drained)
1 can corn (drained)
1 packet taco seasoning
a little water if you are scared of burning it to the bottom
layer it exactly like that, cook it on high for about 4-6 hours then remove the chicken to shred. Once shredded place it back in the crock and mix it well. Place half a block of cream cheese on top and let it melt. Mix it again once it has melted. Once it is hot again you can serve it over rice, roll in tortillas or dip tortilla chips in it. I have also found it freezes pretty good. Everyone loves it.

I've been finding pork on sale lots lately, so I've been crockpotting pulled pork. It's new to me, but it's working out okay.

No; i have never had enough to freeze!

Since I am on-plan, I portion out enough for my lunch the next day, my dinner for that night, which is 1-2 servings, and then the DH splits what is left between dinner and lunch the next day.

I woudl ASSUME that it would freeze well, but i won't guarantee leftovers!!!
