I'm going to have to tell my sister about this, and try it myself. We both like to bake.

Stick the bean slices in a large mason jar ( I used clear so I can see the color of the extract ) and fill the bottle up with vodka (don't use cheap vodka. Use a decent brand for better results ). Close the jar and let it sit for about a month. Shake the jar gently every other day or so as it sits.

Take the beans out, pour the liquid through a cheesecloth to catch little bits - and that's it. It's done.

What do you consider a "large mason jar" because I have some that are 1/2 gallon size?
Thanks

Do you have a store that does beer growlers. Dark containers are good and buying a growler would be a good idea for the jar

I got two wine bottles from my neighbor. They are dark and I put 10 split beans in each jar along with 3 cups of vodka. The remainder of the vodka I used for almond extract. We are making it four five of us(me my daughter and my three daughter-in-laws)...we all bake a lot and are excited to have a good vanilla and almond extract for our holiday baking.

I haven't tried making any, but I would love to. I may check into buying some beans and give it a shot.

I used the quart ( 32 oz ) size. That makes a lot of vanilla extract, seeing as how you use it by the teaspoon / tablespoon!

For those of you making this as a gift, how do you package/present it?

I do mine in mini wine bottles. Just scrub the labels off, sterilize them in a baby bottle sterilizer, replace the corks with plain corks. Gives me a decent excuse to buy them.

My friend told me you can find small bottles at Michael's craft store....and she there are websites where you can print off cute labels too. I have not had a chance to check out Michaels but plan to next week sometime.
