Here is what it means to bloom your yeast. I have a thermometer that I use to ck temps. I was having trouble with my breads also and since I have no central heat, I got the thermometer to ck my liquids temps.

the water has to be that temp because too low and the yeast wont react and too high and you kill it. it really seems to help my bread as well as the wheat gluten. You can get wheat gluten at health food stores or places like amazon. its a powder that comes in a box or a bag kinda like flour.
