I made my infamous jalapeño cream cheese and shrimp stuffed bacon wrapped peppers for the super bowl festivities today! I use a pack of bacon and cut them in half which yields about 24 or so pieces. I had two pieces left so I put them an a ziplock bag and tossed in the freezer! I'm going to use those two pieces(instead I'd throwing away) for seasoning some purple hull peas later!
What do you do with your little bit if bacon leftover from projects I also use them to season my pinto beans Green beans Mustard greens Crumble in quiches |

I will open a pound of bacon for my boys, pull out the pieces I'm going to fry up, and then roll the leftover strips individually into rolls and freeze them standing upright on a cookie sheet until they are hard. Then you just snap them off the cookie sheet, bag them, and you have an individual bacon roll for when you need a strip or two for a recipe, or you only need a couple of strips. They thaw quickly.

I use it in twice baked potatoes--or add to homemade loaded baked potato soup--that is if the dogs with those big brown eyes don't con me out of it first-lol

Haha! True- leftover bacon is hard to come by!

fry up some potatoes and crumble that bacon over them with some hoffman super sharp cheese....add some sour cream to the top and you have a fake baked tater!!!
