Help Help! Bread That Tastes "Yeasty"

Hi all:

I've been getting back to making bread. I've made it before, but nothing too seriously like I want it to be now.

I tried making potato bread.It didn't turn out right...it fell! I'm thinking I let it rise too long and my pans weren't big enough. But, it tasted "yeasty" there was a slight aftertaste.

Today, I made yeast rolls. The recipe called for 2 packets of active dry yeast. There was a yeast taste, but no aftertaste. They were good to me and my family. I get that I was making yeast rolls, and slightly expected for there to be a yeast taste.

I don't know if it's me being sensitive to yeast smell and taste since I've been experimenting with bread making lately.

My question is...when is it ok for bread to taste like yeast...or have a yeast taste?

I make gluten, corn, egg, milk, nut free bread for my Daughter every other week. I have also played around with other breads for myself but have never had a yeasty taste. With my family if it tastes good, we eat it. Sorry I am not much help on this one

I've never had "yeasty" tasting bread before when I've done it before. But, I did notice that the recipes that I'd used previously only called for 1 packet of active dry yeast.

These two in my OP called for 2 packets of active dry yeast. I'm slightly wondering if that's it, and I'm not use to it....idk...

That sounds way to much yeast lol I use for extra large bread like 1 tea spoon or so

Really! Ok...I've seen recipes for both the bread and yeast rolls with 1 packet of yeast, but it just so happens that I liked the recipes with 2 packets of yeast in them. (ETA: I liked the reviews of the recipes with 2 packets of yeast in them). I'm not that skilled at making bread to know how to tinker with bread recipes.

I'll add this to my list of things learned this time around!

I think it was too much yeast but I also use potato flour in the gluten free bread and it can make a heavier/dense bread. I would cut it back on the next batch

The proportion is usually 1/2 teaspoon of yeast per 1 cup of flour if you're using jar yeast. A packet has 2 1/2 tsp of yeast in it. I think it was too much yeast regarding the taste.

As far as the bread falling, the dough may have been too wet to support the raise.

Sorry your bread didn't work out. I used to make bread all the time, but now I need to find some healthier recipes. Fresh white bread is addictive and bad for my waistline!
