For breakfast it was alway's cold cereal, Lunch & dinner/supper was sandwiches unless I did cook which was very late at night when the temperature was down. Then it could be reheated in the microwave.

a salad with tuna or caned chicken is good also.

We order bbq~with chips, potato salad, baked beans and slaw.
Or, sometimes I cook breakfast for supper~I called it "Sunday Country Supper" as a child.
It's quick, filling food and doesn't heat up the kitchen too much.

When it's real hot like that, I'll cook a pot of pasta outside on the BBQ and let it cool off. We make a tuna pasta salad with it.

My husband's grandmother grew up on a rural farm without any air conditioning. She called cooking at night so you don't heat up the house "running a night kitchen." So sometimes I'll cook a chicken in the small convection oven, or an overnight crockpot meal and call it "running a night kitchen."

My grandma said that she used to do that also. She said that sometimes she would be up after midnight cooking.

One of my latest favorites is cold grilled boneless skinless chicken breast with fruit. I also use my crockpot a lot. I makes roasts for sandwiches or have it with a quick side dish.
